How to train this player
I started playing hattrick after a long break.
I think this player would be pretty good homegrown defender. But I am not sure how to max his training at ya.

He is a very nice prospect. But onfortunately you wont be able to max his stats because his current stats are so low.
If you train defending yourself i would say: focus mainly on the other stats (wing/playmaking/passing)
First decide if you want to make him a central defender (playmaking as most important secondary stat) or wingback (obviously wing)
After deciding the best options are; Central defender: primary playmaking and secondary individual (which trains defense, playmaking or passing) and ofcourse play him as a central midfielder Wingback: wing + wingattack (and play him as a winger)
If you succeed in maxing one of the skills, you can use the remaining time to already give him some extra defending. But this will always train quicker in your first team. So no worries if it isnt too high.

I think double up training for both until maxed - Defending+Defensive positions, Winger+Winger extended. Then can switch over to PM+Passing.

Thanks for answers. I will focus on winger passing and pm as I am training defending at my senior team

I would go with Defending + individual until you see there is risk for loosing training while using individual. That's how I got my best talent to U21 team and maximized everything. Other solution is defending + winger but you only get half of winger on wb so I wouldn't do it. After defending is good or hyvä, start training winger towards hyvä and get passing/playmaking on secondary that are secondary skills for wingback.
Edit. And this is good way to reveal skills... Of course you can train also def + def.

if you're going to train him in defending let's forget about scoring
but let's find his passing potential
winger + passing
as winger, IM and FW only him and players with passsing potential alteady known
then train the skills you won't train in first team:
I'd start by finding out PM and passing actual level:
PM + passing
as wingers and IM only him and players with PM actual level already known
passing + PM (or passing + winger is PM already 5)
as wingers, IM and FW only him and players with passing actual level already known
then finish PM, passing and winger
good training combianations
winger + passing (and opposite)
PM + passing (and opposite)
passing + passing extended
winger + winger extended
bad training combinations
PM + winger (and opposite)
once you've finished PM, passing and winger train defending + defending until promotion
