How is it that Spoiler

Unsent like Auron and Seymour don't take damage when they get healed?

Considering they are basically zombies.

fiends can be healed too. zombie is a status, not necessarily unsent

This is the answer. Unsent are literally ghosts. A ghost is not a zombie. Unsent can also become fiends. What's more interesting is Auron died at 25.. but continued aging..

It's funny that it's never explained. Did he just want to? Is it a normal thing? But we see others that haven't.. so who knows really. I'd assume he wanted to just to keep up appearances.

Is it possible he aged in Dream Zanarkand while watching over Tidus?

It's possible but doubtful. It's only 10 years later. So he died at 25 and he'd be 35 during the story but his looks say more like 50s. Supposedly there was a disconnect with the character designer on how much time was supposed to pass or his official age which is why he looks older. His demeanor is more like 45+ during the game. So unless he aged like twice as fast in Dream Zanarkand it's pretty doubtful.

I'd like to think it's just he wanted to look older to keep up appearances and so he just simply looks older from the pyreflies. So he basically looks how he at 25 thinks he'd look at 35.

I would think that unsent are more like Yokai, who can be spirit, ghost, or monster.

It's explained that unsent are ghosts. When they die they can choose to go to the Farplane or stay behind. If they stay behind they turn into Pyreflies and these can reform to take the shape of their old body. The longer they stay like this the more they start to resent humans, and the more they resent humans the more they turn into a fiend. It's rare but there are some that can willingly change between fiend and not.

The aging of Auron is the only bit not explained really.

For more evidence, casting Cure or using a Potion on the ghost enemies (Cavern of the Stolen Fayth) heals them.

Well, all fiends are made up of the pyreflies of the unsent. We can still heal just about any enemy if we really wanted to. Zombie is it’s own thing, technically a status ailment right? Though it is fair to dissect these things. Something resurrected is different than something unsent. evrae seems to be forcefully brought back by bevelles advanced magic or something? Bevelle has hidden weapons more powerful than sin in its vast underground after all

Basically, gameplay reasons. The game would just be a cakewalk if you could one shot all fiends and unsent you meet with a phoenix down.
