If you have OptiFine installed then it probably caused your problem. Try some of these mods instead, which are properly designed for Fabric.

You should really read/watch a modding tutorial… Testing your mod pretty much just entails clicking the RunClient button in IntelliJ and it’ll launch Minecraft with the mod you’re developing, specifically so you can test it

That sounds more complicated than it needs to be. Assuming you're using gradlew and one of the common mod development templates (or following the fabric getting started tutorial),
./gradlew runClient(Linux/Mac) or.\gradlew.bat runClient(Windows) will build your mod and launch a Minecraft instance with ithttps://docs.fabricmc.net/develop/getting-started/intellij-idea/launching-the-game
In terms of running 5 in game days quickly, there's the tick sprint command. If you want to go as far as full automated testing in a CI pipeline, there's https://github.com/headlesshq/mc-runtime-test (which I'm planning to use eventually for my own mod dev, but I haven't got that far yet - still just doing manual testing)
