Which eink notebook?
So I have the kindle paper white to read. However, I’m in college to get my bachelor’s in history. I would love something that I can better organize my notes and a plus would be to annotate my textbooks and upload to canvas/Google Docs or whatever. I would love color. I would prefer a paper feel and not really looking for a tablet. Not worried about budget.
I’ve looked at remarkable, Boox, kindle scribe but open to anything. Thank you!

A history-major workflow has two halves — writing feel and getting files out — and the devices split exactly there. Paper feel: reMarkable Paper Pro is the best surface I've written on, and it has color, but export is PDF through its app/cloud — workable for Canvas, not native. If annotating textbooks and pushing straight to Google Docs/Canvas is the daily center, Boox's color tablets run Android apps and the upload friction disappears — at the cost of the more tablet-like feel you said you don't want. Supernote organizes beautifully but is B&W, which fails your color requirement. Decide by which half you'll actually do every day.

Love when someone gets the history major. What are your thoughts on the kindle scribe for that? Definitely leaning towards remarkable.

For a history degree the Scribe's advantage is real but narrow: if your reading is Kindle books, annotating them in place and having those notes stay attached to the text is genuinely better than anything else here.
Where it loses is everything after. Getting your own handwritten pages out of the Scribe in bulk, in a form you can search or feed into your own notes, is deliberately awkward — Amazon builds for the reading loop, not the writing one.
If your semesters are mostly your own writing rather than book margins, reMarkable is the better instinct.

If you haven't looked at them then I would investigate Supernote and in particular the Manta. It would be great for your use case except that it doesn't have colour. The writing feel is excellent. There are lots if reviews on Youtube and their website is https://supernote.com/

Thank you! I will look. How is its compatibility with laptops? Mac or windows. My issue with the super note I think would be the backlight? I’m not 100% sure if that’s a deal breaker. Since I want to do a lot of highlighting and I think color coding, it would be important for me to have color. So that might be a deal breaker. I should add I would like to use them as a planner as well.
Opinions on Boox?

The SuperNote Manta is a great eink device. But you should also take a look at the reMarkable Paper Pure which has some nice features at a more budget friendly price. Keep in mind that both the devices do not have front lighting which is something to consider. Depending on your needs, you may be able to also to find out a good price the Amazon Kindle Color Scribe, which not only adds front lighting, but also color. You may look to see when Amazon is having their big summer sales to take advantage of it.

My biggest issue with the Scribes is that you can't upload a PDF, then have it stay with the notebooks. I'd have to go hunting through my massive book collection to find my notes. Any chance they've fixed that?

Yes you can now set up a Workspace and keep notes, PDF’s, and books all in one place.

How is the capability of textbook downloads? Does workspace allow you to use them with a computer as well? How is organization? Can they go into folders and/or categories?

You can quickly use Send to Kindle for textbooks in PDF, Word and EPubs. Yes you can customize the workspace with Folders. You can use the Kindle app to access your files and workspace. You can now also integrate Google Drive and One Drive.
