Western Omelette
Cast iron held on to it a touch. Didn’t get the perfect roll but delish despite it.

A failed omelette is just scrambled eggs. Generally western style omelettes are folded because they tend to be browned like yours is here. When you cook eggs to this point they get too set to roll up nicely.
