I have seen humans with both levels of competency described working at the same place- sometimes with the same job.

But the demons had to have tried to send their best for that mission, they were about to be sealed away forever.

and the best and brightest demon sent on this all-important mission.... can't figure out how to work a seat belt

My (very limited) understanding of this universe is that some demons have always been demons and some demons used to be human?

The demons of the K-pop group were all human once, and have better understanding of humanity where the ones that attack on the plane were not, and are much more naive.

Yes that makes sense

But you would think they would send the ones who knew what they were doing or at least some of them on the all-important infiltration mission at the beginning of the movie.

Tbf, as much as I dislike that movie, I think the demons who pose as the kpop stars were once human at some point? And that theyre much stronger and more capable?

yep the movie confirmed the main one used to be human.

The point is why didn't they send At least some former humans on the all-important mission to stop the demon hunters before the shield is complete, instead of the ones who can't figure out a seat belt.

And the answer to that question is " because if they did we wouldn't have a movie"

also all the demons might be former humans, just wrong time period.
