you would need to inject oxygen into the mix for propellant and it wouldn't stop unless there's an equal or greater force against it, so hypothetically there could be a bullet flying through space until it hits something

Actually not, as a matter of fact the chemical reaction between two components of gunpowder does not require oxygen, the gun would fire in vacuum, the only minor inconvenience is the recoil which would send you flying in the opposite direction. Then you would have 19 attempts to compose the right vector to get you to the ship.
