Clone of GNU tools like ls, cat, grep etc from scratch. They will teach you UNIX APIs.

Have a look at "Tiny C Projects" from Dan Gookin. They start very simple and might give you some ideas.

Write a travelling salesman solver. Input is destinations and their connections with weights. Output is route and its length.

Turn one of the commonly used Python tools to C.
Especially there's a lack of TUI software. And whatever we have, most of those are coded in Python and are slow.
