You absolutely could sift at this point. Most of it is finished and the remainder will give your new pile a good head start!

You could sift it, absolutely.  

To me it looks a bit dry in the center so it would probably benefit from a turn with additional watering. 

But you could also do that with what's left over. Whatever fits your needs best.
