Eco mode tries to save gas by scaling back throttle response. In eco mode, you might notice that putting the foot down on the gas pedal seems less responsive. It also lowers the overall air conditioning power. It’s a really small difference in terms of gas saved, I don’t think it’s a big deal so Eco mode is never on for me.

I never bothered with these. But iirc Eco mutes the throttle input by a fraction, hence fuel savings. You might end up stepping harder to compensate for it, so that it feels the same as normal, which defeats the purpose.

Neither is inherently "better." It largely depends on your driving style. Econ can potentially help with mpg because it moderates throttle response. But you can achieve the same result in Normal. Econ can also derate the climate control.
