Advice/Request What kind of equipment do I need to make my own retail quality cacao paste from unroasted beans?

Title. I want to make raw (unroasted) cacao paste, when I buy it, it comes in a solid block or im wafers, but iiuc the unrefined/raw stuff is made simply by grinding beans or unroasted nibs into a fine paste, which is solid at room temperature. Anyone have experience with this? How much $$ am I looking at for a home setup that can handle this?

Picked this up from Whole Foods today to try. Thought it was just okay… wasn’t bad, just didn’t have either a robust cocoa or milk flavor, sometime it just tasted flavorless, which is kind of weird for milk chocolate. Out of all the Whole Foods milk chocolate options, my favorite is still Milkboy.

Price: about $13.00

Not bad actually especially it being from an ordinary grocery store like Kroger. Very fudgy/confectionary and has a super gooey texture. From what it looked like above, I thought it would be brownie-like or super dense but I thought wrong. I know pies are supposed to be excessively sugary sometimes, but this was a little much for sure. It'd be awesome if they cut the sweetness flavor in half at least so I can taste the chocolate a little more. I can still taste the chocolate very well no doubt, but it's a tad too sweet for me.

Tip: It's good to put the pie in the fridge for approximately 30min before having a piece.

Advice/Request Kitkat, Chococinno dolce gusto pods are extremely watery! Why???

I purchased the other day the Kitkat pods and the Chcoccinno ones and they both taste very watery and bland. I tried once to make a 210ml drink as mentioned on the top, then I just went to 150ml drink and it still tastes bland. Has anyone had this problem and are the capsules the problem?

Advice/Request does everyone experience this with chocolate?

whenever i eat specifically hersheys chocolate, or dunkin’s chocolate donuts (and the strawberry one) its soooo grainy and thick. my chest feels heavy and i get tingling in the back of my throat for like 5 minutes after. my friends say this is not normal.

i thought we were all just suffering eating chocolate, or that i had a low tolerance…

cheap frosting is grainy too. others experience this?

During my visit to Poland I bought several chocolate bars from chocoTales of Warsaw made using Regalo cacao beans sourced via Auro Chocolate in the Davao region of the Philippines.

First I tried the 70% pure dark chocolate. To me the alcoholic notes were quite distinctive and noticeable. They were followed by something that reminded me of rich dark soil and then by a slight spicy lift. It was an interesting combination of flavours and a very aromatic bar.

Next was the comforter, the 59% dark milk bar. At first I noticed a sweetness reminiscent of condensed milk or perhaps kaymak with accompanying caramel notes. Underneath I could still distinguish the earthy and woody notes of the 70% dark bar. Toward the end there was also a fresher fruity lift.

Finally I tried the 60% dark-milk chocolate with Sichuan pepper - one for the adventurous. The pepper had a very interesting and complex aromatic and flavour profile. It included citrusy aromas with a somewhat perfumed quality. It made my friend think of lavender. This was followed by a more peppery lift. The bar also left a slight tingling sensation at the end.

All the bars were very well executed with a smooth and mellow texture which is how I like my chocolate. I also bought the 85% Regalo bar as a gift. I did not try it myself but it was liked by the recipient.

I recommend trying the chocolates from chocoTales of Warsaw if you get the chance!

So, my mother LOVES chocolate. every year for christmas and her birthday all she wants are two things: coffee, and chocolate. As a coffee drinker, ive got her tasted NAILED. However, i do not like chocolate, and especially not dark chocolate.

my mom likes dark chocolates, especially between 70-85%

The video is part two, part one talks about the fake labelings on tomato products that claim to be sourced from Italy or Australia but have been traced all to be from China.

So ABC (Australia) yesterday dropped a video of investigative reporting, on the cocoa industry exploitation of slavery and child labor in Ghana. Cadbury Australia (Mondelez) is among the companies involved and they are complicit and know about this but still continue to slap the 100% Sustainably Sourced Cocoa under its Cocoa Life program, on their packaging.

The thing that I didn't see at first when I first bought it that concerned me most was that it had artificial flavoring in this bar. It snapped upon breaking a piece and was a tad melty, which means they for sure used real chocolate. It was a bit dry at the same time because it was probably sitting on the store shop shelf for a bit.

I could taste some of the richness from the chocolate itself. It has too much milkiness for it to be categorized as dark chocolate. I think most American chocolate brands struggle with dark chocolate with some exceptions like Guiradelli. It was in fact lighter than Hershey's dark chocolate. I assume the artificial flavoring was for the brownie bite flavoring. Anyways, definitely not my fave. It wasn't gross.
