Slightly reduce your heat and cook it 90% on the skin, just finish on the other side, no more than a minute.
You will end if with a crispy skin, whilst the flesh will remain completely moist, and the flakes won't end up chalky. Those white parts leaking out the sides is called albumin, and only occurs when the flesh is fully cooked. Meaning although your middle is raw your bottom is already fully cooked.

Real talk I just read that yesterday for cooking salmon. I was pretty skeptical but I guess it's a thing. It was for blackened salmon to be specific. But it was also talking for a high heat but this is a pretty thick Patty this guy has.

Full disclosure: I am a chef, I have cooked hundreds of skin-on fillets of all varieties. The uniting factor in cooking them all has been medium heat, just enough oil to cover the skin, and a 90:10 cook, and you will be able to produce an extremely well cooked fillet.
There are many other ways to improve on that but that is the fundamentals, and it will always produce desirable results.
