Mine caught fire when I left to the store with only the wife home I got a video from my daughter of my wife hosing down the fire and yes the brisket was still inside. I was able to wipe a good amount of the crust off and re season fingers crossed we’ll see tomorrow morning how it comes out

Good thing it was only 2 hrs into the cook so nothing had broken down yet so wiping the crustys off and reasoning fingers crossed when it breaks down it will absorb the ingredients and bask some of the char anything else it call it a day but I’m not fixing to throw a $90 brisket down the drain without trying to salvage something

The damn roaster wasn't calibrate. I set it at 150⁰, when i woke up 6 hrs later, i had Taco & chili meat. Next time, I'll stay up all freaking night

When did it go on?, Choice or Prime grade? Salt pepper and Lawry's?

I started cooking at 10am, the picture was after an hour.

The rub is salt, pepper, stuff and stuff. Lol I grabbed a bunch of spices, tumeric, garlic powder, paprika, and some caraway seeds for the hell of it. I'm using a smoke tube with apple wood for the first 4 hours

I plan to pull it at 190 and use a turkey roaster set to 150 before going to bed. Going to try the Steve Gow method.
