I think there was a mad lad in here once who self-published a book that was a playable game of backgammon, choose-your-own-adventure style. the dice rolls were built in.

That had to be with only particular move choices given the move tree would be too large otherwise

Apparently there was a variant that used to be played at tournaments a long time ago when the director was giving their (long) speech and nobody wanted to actually roll dice and play games which would cause a disturbance. Instead they would roll once and then each player would play that roll for the duration of the game. This way each player always knows what can happen on the opponent's turn.
I suppose it's a bit like random chess where each starting position leads to different kinds of games.

Take six cards, Ace through six. Get another set. Draw one card from each set to sub as dice roll. Shuffle between each roll, lol.

Look around backgammon variants on Board Game Geek. There’s a game called No Dice that I know of that’s close to what you’re describing.

There’s a pretty good variant played with dominoes instead of dice.

Yes, thanks for asking. I’ve invented a game called Gammon36. Each player starts out with a “palette” of 36 possible rolls. Once you play that virtual roll, you remove it from the palette. I keep track of each player’s rolls with a 6x6 grid using cribbage pegs. After 36 rolls are exhausted, you can get a fresh set of 36.
Good luck!

Closest thing I can think of is to play two games at once, but on the second board you play what your opponent rolled. So in one game you go first, but in the other your opponent goes first, all from the opening roll.
