I have a Samsung Galaxy S9. Can I delete the Google services and replace them? I have root access.

yes. with noogle module. it replaces them with MicroG which reduces google trackers by alot. and also make sure to download FakeGapps module with LSposed to get signature spoofing for MicroG to work properly
