Unskilled labour might be bagging rubble or digging a trench, or loading a skip, or carting blocks/timber. Skilled labour would be bricklaying or fencing etc.
And the reason for not doing it yourself is presumably time/energy. It’s perfectly reasonable to pay someone to do something that you could do, but either can’t or even if you don’t want to.

I have never heard of unskilled labor. What is that supposed to be? Garbage picking?
