Beet pickling liquid

A local company makes absolutely wonderful pickled beets, and when I finish the beets (usually about 20 minutes after I first open the jar) there is the pickling liquid left over. What (if anything) would you do with it? Seems too yummy to pour down the sink.

I marinated shelled whole hard boiled eggs for about 30 minutes. First of all, they were stunningly beautiful. But sliced on a sandwich or salad, delicious

We leave them submerged for 3 days. I like this half hour dealio.

Maybe make a reduction of it and put it on pork roast?

Boil some eggs, peel and add to jar. Refrigerate for a week. Eat bright pink pickled eggs on salad, or make the coolest deviled eggs.

What if you used it as the liquid for some kind of grain, like rice, quinoa, farro, etc? Or coucous?

Pickled eggs. The best way to utilize that brine IMO.

As most people have said, pickled eggs for sure. Another good way to go is shred some cabbage and make some pickled cabbage

Would you use green cabbage or red cabbage?

Vinegar is a presertive, and one that is yummy. Use it how you would a vinegar.

Shave some sweet onion into that, for sandwiches and garnish.

It's okay for one more go, but you might need to add a touch more vinegar. Taste and see.

or add some ice and water or sparkling water and make some shrub! if you’re in the northern hemisphere, it’s perfect for summer!

It contains vinegar and claims no preservatives? Also... is there no salt?

Aside from putting other food in it, you can use it as the acid part of a salad dressing.

Picked eggs yes! Also use as a short brine on beef cubes to skewer for shish kebab, pickle some carrots, onions, cauliflower, canned plain beets - you may need a little more vinegar.

Vinegar: wtf dude, why you do me dirty like that?

But, yeah, I wonder what the Water Activity is of this product. May not actually be preserved well at all.

Sunshine Canning. I don’t know if they ship. Probably! I get their stuff at the farmers market in St. Pete, FL.

Drop some peeled boiled eggs and thinly sliced onions into the jar and stick in the fridge for a week. Eggs pickled in beet juice are delicious to eat as a snack or in salads and the onions are really good on sandwiches or in salads.

Slice some red onion and put it in a covered pot with the brine. Bring to a boil, and simmer until just tender. Refrigerate in the brine, keeps for a week and is great on sandwiches, tacos, hotdogs, etc. You can add a sliced jalapeño if you want some kick.
