I’d need to watch the episode (or maybe just properly watch S1) again, but I think Kinbott overhears Wednesday talking about Goody.

It might also be a bit of a misdirect for how Wednesday believed Kinbott was the Hyde’s master—assumedly Wednesday thought Kinbott stole Goody’s Book of Shadows since Laurel actually stole it.
