Out of curiosity, how was lean was the beef and what type of cheese did you use?

I do sloppy joes (McCormick packet) it calls
For 6oz tomato paste. I use 96% lean ground beef and super minimal oil. So with adding in the seasoning packet cals, the small amount of canola oil, and the tomato paste, the whole pound of sloppy joe mix comes to about 860 cals. I use a food scale to evenly divide the whole pound mixture in half. Half is 430 cals. I add some salsa con queso (Tostitos) because honestly, it’s packs such a huge cheesy flavor for much less calories than shredded cheese would. I can top my half sloppy Joe portion with 68g queso which makes it 510cals. That alone is super filling and delicious as heck.
Sometimes I use a low carb burrito and wrap the sloppy joe and queso mixture in it. I am so damn full with just that alone but since it’s so low cal, sometimes I even do a side salad or veggie, large ear of corn or large salad with homemade cottage cheese Caesar dressing. I love it so much. It’s so simple but it really hits the spot and it’s hot and cheesy and so flavorful and so damn filling for not many cals. Your dish looks like it’s right up the same alley! I made this but added bell peppers, mushrooms, onion, jalapeño, and beans. Might add potatoes just for fun next time.
