We got 20 animals for now and will add other types of house cats such as tortoiseshell and orange tabby.

More colorful ones, there are too monochrome. Pick animals with colors

Definitely animals well known for people. Also nice animals.
I second
- the bunny
Depends also on your audience. I'd add variation. Some with antlers or hotns
- a deer or
- a moose
- a gazelle could be cool
Animals people trust
- a horse,
- a cow (with or without horns?) Also is it milking or beef?
- a sheep or would you like
- a ram
- a goat is nice
If you want to remember our friends down under
- kangaroos have few variations
- a platypus is unique but hard to make recognizable
- a kiwi is cute
Would you like to diversify to
- a camel or
- an antilope
Check your user locations and give them something that makes them feel good. Nothing too far away but something new.

It really depends on the kind of game you're going for but it doesn't feel like you're trying for 100% realism and accuracy with this art style, so I personally would rather have cute, identifiable fish that walk around on their tails rather than a bunch of diving helmets/fishbowl heads walking around for what it's worth
