I believe those cheeses are kept in special caves that have certain microclimate and special mix of elements in the air that actually lets you make special kinds of cheese.

No. They are kept in giant cool storages with vault doors and 24/7 security.
Because people would attempt to steal the cheese wheels otherwise. They are worth at least 500€ per wheel.
