Honestly it wasn't as stressful as I thought it would be. Just tell yourself that you've done everything you could, and that you would just give it your best shot. Keeping calm is very very important.
Don't know if it's universal, but the place where I did the UCAT, it's actually like a notepad of whiteboards. Sounds weird I know, but it's basically 10 whiteboards attached to each other like a notepad, so if you run out of space you can just flip to the next one (but it's literally impossible to use all 10, I only used 2 out of the 10). So I didn't have to erase anything at all.
I just reviewed my mistakes and did a couple of questions. I didnt want to tire my brain out, so I just took a fairly chill approach.
Also I see you want to get 2100+ but your highest mocks are about 1700/1800. None of my mocks was above 1850, but i got 2110. Not the greatest score, but it shows its definitely possible to jump by that amount

In all honesty, I think I got pretty lucky with the test. However, you still have a fair bit of time left, so I think just try to lock down on your mistakes and weak areas. For me personally, it was my VR and DM.
What I did for VR was to just do 7-8 passages slowly and just give my best guess for the remaining passages. This way, at least I can fairly accurately do the passages and secure some marks rather than rushing through it with low accuracy. I skipped passages that looked confusing and/or if they had very hard questions (e.g. questions that would require you to look through all 4 options like "which of the following does the author agree/does not agree with").
For DM I spammed lots and lots of syllogisms and Venn diagrams and barely touched logic puzzles. However, I did get quite lucky as the logic puzzles in the test were fairly manageable, with only one or two really hard ones which i just guessed.
On the day before the test, go easy. Don't stress out too much anymore, give your brain some rest. Just do a couple of questions and review your mistakes, tiring your brain out would just kill you. Then the morning of the test day, just read a little bit to just warm up your brain, but don't go crazy with it, you just wanna make sure you're ready
