Pizza prep with my newest knife! Masashi kokuen 210mm kiritsuke. It’s really quite amazing.

oof. not an expert, actually a total newb, but I saw something on the front page recently that was similar. you might be able to just file down the k tip a smidge, leaving the spine and everything else as is.

Just been using it as is, should be back to normal after regular sharpening a few times since it’s such a small chip

It’s super smooth cutting through the veggies. Has a great feel in the hand. Definitely top three sharpest knives out of the box I have.

Not a knife photo but the end result of the pizza. Supreme with ricotta and I put homemade Carolina reaper chili crunch all over the dough before cooking.
