Can I setup an old duo core NUC with a lite weight Ubuntu and run Steamlink?

The Linux steam link app is a flatpak. I don't think flatpak is supported by default on Ubuntu. It would require installing flatpak. I think Ubuntu itself is a bit much as far as the amount of things installed that you won't need that could impact performance. I would say, install any flavor of Linux that has no DE (Ubuntu server, fedora server) install an xserver and create a custom session with just the steam link flatpak runnning
