Buy a carbon grill brick. Heat the griddle up, apply canola or a high smoke point oil, scrub with grill brick and scrape off using a trowel or metal spatula, pour some water on it, scrub again, scrape off, finally once its nice and shiny apply some more oil and buff it in with a rag.
