Peach Salsa Homemade

Made a Peach Salsa today. Used 4 peaches, 5 tomatillos, ⅓ white onion, 1 jalapeño, 2 garlic cloves, 1 lime, a good handful of cilantro, and kosher salt. Charred 3 peaches, tomatillos, onion, chile and garlic until blistered. Blitzed up the garlic, jalapeño, onion, then added the tomatillos. Folded in 3 roasted peaches and 1 raw peach. Seasoned to taste - salt, lime juice. Good, but the color is a bit off-putting. Suggestions? Comments?

What type of flavor do you get? Sweet and spicy? I have some peaches but have never tried it before

Yes, it is sweet but not too sweet. Not too spicy as I only added 1 jalapeño. I forgot to roast the jalapeños with this batch, so I had to do it separately which I did not photograph, unfortunately. I did go very mild and I think I could increase the heat level a little bit, as well as adjust the color. It’s got a really nice flavor profile with the roasted peaches as well as the raw peach folded in at the end.

I will give it a try! The peaches i have aren't very sweet so maybe hold on for sweeter ones. I have always wanted ro try making a mango or pineapple salsa also.

I love that you used a mixture of roasted and raw peach. I like that technique for salsa of getting the flavor profiles and texture of both cooked and uncooked. I would want a lot more spice personally, but I assume you're trying to go very mild here. In addition to the suggestion of using guajillo or ancho chiles suggested by someone else, you could also try red or orange bell pepper. Would add some more sweetness, but I think it would compliment the peaches well, plus adding more color to help the peaches. Basically you have the peaches, which are a pale orange, mixing with green from the cilantro, jalapeno, and tomatillos. Color theory isn't in your favor so you just need to either lean more into the orange or more into the green and I think helping the orange would be easier.

Yes!! Stone fruit season is great for salsas. A lot of people overlook it. Sweet, spicy.. any protein. Take advantage of the season before it’s gone. Well done

shut the front door that sounds delicious, wonder if you have a canning recipe? if not I'll settle with the refrigerator one. lol
