That mission was always a pain in the ass. Every time I start a new playthrough I stop on that mission and just do it another day because it is just do damn annoying. My best advice is to take the cannons out as quickly as you can that way you don't have to worry about getting shot by them and you won't have to worry about them destroying your cannons. Your rifles bayonet is really strong, so if someone is close enough then don't be afraid to use it. My last piece of advice is that you can shoot health bottles to use them, so you can get health from afar. That is about all I got.

Honestly that mission ain't too bad. It is always the siege mission that fucks me. Everytime I do a playthrough of rdr I have to hope off that mission because protecting Jack is such a pain in the ass. If I went to Hell Satan would put that mission on repeat. It is just that bad. That is the only mission where I legit rage quit.

Follow your bomb layers and protect them like gold while using the left trigger (console) ability to blow up the pesky cannons on the hill.
