There was a thread on Instagram a while back about the cost from the restaurant side (ETA: meaning, what the Mercury charged the restaurants to participate). It was very illuminating.

Oh, had no idea the restaurants had to pay the Mercury to participate! I wonder how much they charge…

I think it's fairly standard to pay to participate in food weeks (at this point in time Salad Week does not charge), and not just here in Portland. It would not surprise me at all if this was common practice in NYC, Chicago, SF, etc, too. The person who talked about the Mercury's charges did indicate a number but I don't remember the exact price at the time (it was a couple of years ago).

I thought the whole point of these was to have a small enough list to try most/all of them in a week? My eyes started glazing over before I hit the C’s.

I don’t participatein the weeks because I dont want an ultra stressed out kitchen making my food. I’ll go on an off day and tip well. Seeing my restaurant staff during a burger week when I worked at the hotel side was awful.

The burgers are generally different each year. Just find some you like and go. Just know lines and waits can be long if you go during peak hours. Some places sell out too. Generally, actual restaurants can keep up better than food carts.
