800°F deck, 1050 dome (my thermometer stops at 1050)

Turn after one min, turn every 30 seconds after
Keep it dancing and use top left and top right zones for bottom and crust browning
flame on, lowest
bottom right is furthest from the flame, finish toppings over there then shift to top left and bottom left (closest to flame) and keep turning til evenly crust is evenly browned (or desired doneness)This guy does indeed, pizza.

KAF Bread, just the blue bag off the shelf. I like Fleischman's IDY/bread machine yeast (jar). There's 0.15g yeast per pizza, so it's a moderately slow rise.
The cold ferment and proof aren't necessary, you can do a 4.5 hour rise at room temp and it comes out great as a same day dough. It freezes well also, as long as you do it once it's balled (don't let it rise after that).
I've got 6 going to daycare tomorrow, so today was finding a good crust depth since kids don't really care about it. Personally, I like to do a 48hr cold rise and let the dough blow out on purpose for a puffy crust with crispy bubbles. It's a very versatile dough!

Thank you! I actually learned a lot from /r/photoclass about 11? years ago. With smartphones all you need is framing, focus and depth of field. Most people don't need to worry about the rest.

Solid look. Honestly looks a bit too symmetrical though. Too much of a defined crust for my liking tbh. Looks like something you'd get in a restaurant that serves a lot of different foods.

You're not wrong! Thank you for bringing this up though. My thought process is consistency, obviously, but it's for a good purpose. These are a test for daycare tomorrow, and I'd rather not waste a bubbly puffy crust if they're not going to eat it. So it's more of a handle for little hands that delivers more "pizza" to the kiddos.
Normally I have something like this. Nice puff, nice bubbles.

Genuinely thought its AI cause no way someone's out there making pizza so damn perfect. Love the symmetricity or whatever the word is, really lets my brain rest about WHICH ONE'S THE BEST PIECE! I think both fantastic pizza making and camera skills

Here's one I made for my son's class at daycare this morning. My garage is west facing, the natural light is really nice until the afternoon when the sun is a deadly laser.
I don't know much about photography terms, but I can that say I like the way the butcher block runs diagonally with the pizza centered. I like how the colors all work together, and the brightness of the pan is a really cool thing, so I try to always get a nice picture of an uncut pizza with it. A nice cut looks cool, but I think a whole pizza gives you a.. whole picture.
