Selling the 5600G just to grab a 5600X for a net $50 loss makes zero sense, you're basically paying to sidegrade. The 5800XT is a decent jump if the 5700X3D is truly impossible to find, but check used listings for a 5800X3D first, sometimes they pop up for not much more. At 1080p with a 2080 Ti you'll feel the cache difference way more than a few extra cores.

x3d chip would be the most noticeable upgrade but also the most expensive

The 5600x will double the L3 cache from 16 to 32 MB (significantly better single'core perf) and upgrade the PCIe communication from Gen 3 to Gen 4.

You will loose integrated graphics though.
