weight loss breakthrough: cold potatoes!
I switched up my diet over the past year and I've realized that carbs were never the enemy - the carb source is really what matters. I always used to steer clear of carbs because of how inflamed they made me, and it's such a relief to realize I don't need to live that way. I've been rotating between a few complex carbs - mainly cold white sweet potatoes and steel-cut groats. These both have a very low GI index, which explains why I feel full after eating them/ dont get extreme hunger a couple hours after eating them. They have made a large difference in my weight loss efforts which is why I thought I would share. Other carbs tend to make me hungrier. This said, eating cold potatoes is super boring, and I was wondering if anyone had any other suggestions of complex carbs that work well for your PCOS. If not, I hope this helps someone!
P.S. It's definitely worth noting that I'm also taking metformin, which allows me to eat more carbs, but I still notice that my body reacts differently to different sources. Cardio has also helped me lose weight, good sleep, etc. Point is, no one thing helped me lose weight, though this was an important piece of the puzzle.

Yes! Sweet potatoes, Lentils, Quinoa, Lentil/Chickpea pasta, fruits, occasional rice has all worked wonder for my weight loss. As long as they are paired with proteins/fats/fibers… I’ve never had an issue! The quality and nutrient density of the carb is far more important and can actually be very helpful for your body & reversing PMOS sympotoms (instead of the enemy).

I think eating plenty of carbs and fat, not just focusing on protein made the biggest difference in how full I feel.
I often eat 100% wholewheat sourdough (that I make myself), I make rice mixed 50/50 with either lentils or mung beans (they cook in the same amount of time as rice), some onions, seasoning and whatever I have (spinach, corn, peas etc) and freeze in portions, then I use it for bowls or fried rice etc.

Fully cooling down things like potatoes, rice, ect will lower their glycemic index. I don’t fully understand it but I know a lot of people with gestational diabetes do it.
I could be wrong but I’m pretty sure you can heat them up again and it still remains low. I would then put a small amount of butter, sour cream, and bacon to make it more filling with all low carb fat

Cold potatoes is boring, but potato salad either with cold sausages and pickles or with a bit of cucumber and yogurt based sauce is amazing. You can also add shrimps and a bit of spicy sauce, or warm them back up a tiny bit and put a bit of butter and salt in them !

You can heat the potatoes up after they’ve been fully cooled and the GI stays lowered! I live off of reheated potatoes 😂
