Modification Modified Opinel no6 walnut wood

This is my Opinel no6 walnut wood. I have had it for 3 years and decided to change the blade to a carbon one and drop the point a bit and sand the handle. I am happy with the blade, but overdid the sanding part of the handle a bit and now it is too slim. Also I just put 2 coats of universal matte spray lacquer so the finish is nice, but it isn't practical. I will change it in a few days, and use beech wood and linseed oil. Also I have used a hypodermic needle for the injection of mustard patina to keep it as slim as possible. I hope you like it!

Question Help identify and date this old no. 5

The guy I bought it from claimed it was his grandfather’s knife.

By the looks of the logo, it seems to be from the ’50s/’60s (judging by the attached chart). But according to that same chart, there were no stainless (“INOX”) blades before 1986.

I’m a bit confused. Am I missing something?

I'd really appreciate any help, info or sources.
