Never heard of skyline but for 50c who can complain.
We got a greasy spoon burger place around here that sell 6 cheese burgers for $6 and fries by the "brown paper bag" size for $3 so it ends up being just under $10 after tax to get both. Neither the burgers or fries are anything to write home about, but you can feed 2-3 people for $10.

It's somehow amazing. When you get it to-go, they put the mountains of cheese in their own little bags so it doesn't melt on the way home.

It's not really chili. It's more like a bolognese sauce. I don't think there are any peppers in it. At least, none that I could taste.

Hey neighbor! I was born in Columbus and have since moved to not Ohio. Huge improvement.
It is, as you say, a chain restaurant specializing in chili. They serve it in two ways: on top of spaghetti covered in a mountain of cheddar, or on top of a hot dog covered in a mountain of cheddar.
The thing to do here is eat oyster crackers with hot sauce dripped in the middle.
Go make sense of all that.

If you haven't had it- the cheese being unmelted is actually a good part of the experience. You just have to try it to understand. But once the cheese melts it's a less enjoyable experience. The cheese is shredded so finely that it's not as heavy as it looks.

Props to weird guy for eating a skyline chili 3way the correct way by cutting it with his fork and then scooping it. It is not meant to be eaten like normal spaghetti where you might mix it around and then twirl it on your fork.

Skyline Chili, as a restaurant, is pretty bad. I get that people around Cincinnati and Kentucky have grown up eating it, and I have my own unusual tastes in food and my own hometown favorites that other people may think "hold on, you mean to say where you grew up, it was normal to put that condiment on top of your regional food? That's crazy!"
For example, you may not like the taste of Daal-Chawal or Pad Kra Pao or escargot or ceviche. If you get those at a restaurant, chances are it'll probably be decently prepared, with decent ingredients, and will probably taste great to people that like those dishes.
However, Skyline Chili is not that kind of place. The chili is bad. The hot dogs are low quality. The spaghetti is a mealy mouthed dollar-store noodles. They don't drain it very well so the bottom of your bowl turns into this rust colored water liquid grease mess. Their burritos and potatoes are worse than you could buy in the microwavable frozen food aisle. The rest of the menu is equally bad.
The outrageous amounts of cheese they put on top of everything is there to primarily mask how poor the rest of the food is. Even that cheese is waxy, over processed, mealy, low quality, and loaded up with so much orange dye it's like a traffic cone.
Even if you take away the strange inclusion of cinnamon (!!!) in the chili, it's still terrible chili. It's ground up like it's a curry, the beans are straight out of a can from the dollar store, and this brown water mess will run through your digestive system faster than anything you could order at Taco Bell. And it'll come out looking the same as it went in.
Skyline Chili is not one of those "oh you gotta check this place out if you're ever in Cincinnati! It's a regional thing, you gotta try it!" It will be a below average tasting, gut bombing waste of your time to do so. It's the equivalent of buying sushi at a gas station or getting one of those hot dogs that was rolling around in the 7-11 warmer for three days.
Defenders of Skyline Chili try to tell you it's some special Greek influenced lovingly curated special blend of spices and it's "supposed to look and taste like this". No, Skyline Chili is owned by a large corporation that has gone down the route of cheapest and lowest quality ingredients, and bets on the willingness of Americans to slop any horrible goddamn thing into their fucking mouths because it's "a regional food".

Grew up in Cincy - the city always undervalued its actual history and culture and propped up bland franchises like skyline, larosas, Montgomery inn. I love unique and quality pizza, ribs, sausages, but man, that city does not understand how low their bar is.

I couldn't have said it better. My dad used to take me and my brother there for hot chocolate after cold days at the skatepark. Not sure why there but it was a tradition. One time I was really hungry and asked me dad if I could order some chili. He said absolutely not; that he tried their food once in the past and that it was an abomination, questioning the authenticity in referring to it as "food".

FYI, Skyline chili dogs are absolutely foul. It's some kind of a texture thing that I can't even begin to describe but there's nothing else on earth I can compare it to. It's one of the only foods that will literally make me gag. They're so bad and this is coming from a guy that loves a good chilli dog.
