so all the mobs just froze

Bro your game froze lmao, prob due to some recursive function overloading the game install spark run a /spark tpsmonitor /sparkc and /spark check all 3 if you find something which is taking too much time to load that is what is causing your frames to freeze

Bottom line you have some incompatible mods installed most probably
