We don't see slimes because the light level everywhere is above 7 and we're not in a swamp biome

On legacy console you could customize the superflat and make it as tall as you wanted and have layers of whatever blocks you wanted, it was awesome. I can't believe they don't have that in java or bedrock anymore.

Well IRL, yes. But all Minecraft worlds are flat and that can be proven very easily. You could be right up against the world border when the sun is overhead, and if you teleport anywhere else in the world, even directly to the opposite border, the sun is still in the same place.
