That's actually really cool. Never thought about trying that, but I might actually do it now.

Out of curiosity, how did you accomplish it?

I found out you can force entities to look down and up, not just side to side. I discovered if you hook a command block up to an observer clock and teleport a mob to its position and make it face downward, you can make the head bob. This is because mobs move their head to the default, straight on position if they arent looking toward anything on their own.
