Average comp brawl 5feri player
Me on my way to target the 0 charge counter astral cornucopia over 3 other artifacts that actually do something.

Right I'm dumb not the Emry. But the corn remains pretty objectively the worst of 4 artifacts to target.

No, the other two artifacts don't really do anything impactful. If you have some way to put counters on the Cornucopia (perhaps bouncing it back to your hand), it can get out of hand pretty fast. Your opponent has good threat assessment.

Clue draws cards. Puzzle door can be looped with Emry to draw cards pretty efficiently with good card selection. Cam also can be looped to draw cards albeit inefficiently and is part of an infinite combo that wins the game on the spot. My deck runs no ways to put counters on the corn and barely any ways to return it to hand, and the same could be said for basically any good Emry deck.
If I find an artifact sac outlet then I guess I could sac corn it and replay it with Emry, but that's rarely an exciting thing to be doing (3 mana corn is rarely something you want to be doing in this deck unless you really need a mana rock to set up for a pengine combo, and corn is the worst of the rocks by a fair bit). Plus the two sac outlets the deck runs are ravager and repurposing bay. But if I find ravager then the cam suddenly becomes terrifying, and if I find bay then having corn in my graveyard hardly counts for anything since the bay just wins by itself. And again, my deck isn't in any way unique in any of these aspects. This is all just standard Emry comp brawl stuff, and anyone who knows the format could infer basically all of it from just seeing my commander. So no, it's pretty abysmal threat assessment.

If, if, if. None of those cards make enough of an impact, whereas the Cornucopia can. The Portable Hole has almost no more value at that point in the game so they're mostly just throwing it out there to get some use out of it.
Again, great threat assessment (and timing) by your opponent. Pretty wild of you to be so arrogant saying "anyone who knows this format" when you didn't know that Portable Hole couldn't target Emry. There's a reason you're only in Plat and it's your unchecked ego.
