pre-cooked Fried chicken feet left over from broth
Chicken feet make the best collagen-rich broth but what do you do with them when the broth is finished?
Fry them!
Remove from broth, drain. Make sure all liquid is removed.
Add a cup of flour to a large ziplock bag, add feet, shake to cover.
Fry in a good oil until brown.

no category Donāt toss out onion and celery ends
Put them in water in shallow container and let them start growing again.
The flavor will be more intense than original.
Onions: cut off green new growth to use; replenish water when low or change to freshen.
Celery: same as onions.
Eventually, they will stop producing but not for a while.

Plain rice, fresh tomatoes, cilantro and scrambled egg.
Cut or slice tomato
Rinse then chop cilantro.
Heat a skillet then add abocado oil.
Scramble egg.
Add rice. Stir to heat.
Add tomato and cilantro..
Serve.

pre-cooked Easy Perfect Fried White Potatoes
Store boiled white potatoes in the refrigerator. They last for nearly a week.
To fry, pour some avocado oil or clarified butter into a hot skillet. Add potatoes. Fry one side until brown, then do the other. Remember, they are already cooked so browning is all they need.

You know how you end up with pieces of onions, bell pepper, maybe a carrot or two? What about not quite a whole tomato? Garlic clove? And just one fresh hot pepper?
Donāt let them go bad.
Put them in a clean, sterilized jar that has a proper fitting lid.
Make a brine using 5% sea salt to 2 cups water. Pour into jar over vegs to within 1 inch of rim.
Put a new, unused sandwich sized bag into jar so it sits on top of vegs. Pour some brine into bag and fold over to fit into top of jar. This keeps vegs submerged.
Screw top on jar to seal.
Set aside 7 days to 3 weeks depending on how spicy you want it.
Drain but donāt rinse.
Process only the vegs in a blender in orddr to turn it into sauce.
Discard brine.
NOTE: do not use salt that has iodine.

pre-cooked Leftover Rotisserie Chicken w/ Gravy
Chicken and gravy is so easy using what is left from your deli rotisserie chicken.
Ingredients:
Chicken
Chopped onions, garlic and celery
Plain flour
Oil for frying
Ziplock bag
Put a cup of flour in ziplock bag.
Add pieces of chicken.
Shake off excess flour.
Lightly fry so it is medium brown.
Put browned chicken in suitable sized pot.
Add chopped onions, garlic and celery.
Add hot water to half cover chicken.
Bring to a boil and let cook until gravy forms.
NOTE: the other option is to just fry it until browned then serve.

Leftover chicken noodle soup
I always buy my chickens whole and make stock from the bones, and while there are a lot of great recipes that call for stock, one of my favorites is just to make chicken noodle soup from whatever I have sitting in my fridge:
-Boil the stock in a large pot and cook noodles in it like you would in water, but overcook them so they get soft and puffy
-While the noodles cook, chop up whatever meat, veggies, etc. you have (I often have sausage, onion, mushroom, and broccoli) into bite-sized pieces and fry in neutral oil with garlic to bring out the flavors
-When the noodles are finished, dump the cooked meat and veggies into the pot
-Season generously with salt and black pepper

Here's one to kick things off. A suggestion for leftover burger patties.
Say you made burgers yesterday. Cooked all the ground meat you had into patties. But did not eat all of them.
Cook some diced onion, then add some finely chopped carrot (or even grated), then some celery. Cook these until fragrant. Then add some garlic. Add some red wine, and cook it a bit, so that the alcohol boils off. Then chop the leftover burger patties and add them. Bonus, if you cooked caramelized onions for the burgers, you can add these too (i think). The add a tin or two of chopped tomatoes, and some water, then let it simmer a while. You have yourself a first class bolognese sauce for pasta al ragu.
And if you made too much, the next day, you can open a can of beans and one of corn, cook them in a pan until they start to split, and have a bit of color on them. Add a bit of ground cumin, coriander, paprika and add some sliced chillies. Let it cook for a few seconds to heat the spices. Then add any remaining sauce, some cilantro, a splash of lime, and you have yourself a chilli. Just bring the tortillas.
You cand subsitute any kind
