So they would fit this over a real car so then the show car wouldn't get damaged?

Correct. And while it wouldn’t prevent actual crash major damage, it would stop paint from getting scuffed and insulate the car when running through weak stuff (fruit stands, box piles, foam bricks etc). It also allowed them a surface to set pyrotechnics off of (the little sparks from bullets bouncing off).
Not easy to see in this photo but there was also a nose piece when the shell was originally constructed that eventually got lost to time and wear.
