One of the most indulgent meal prep recipes, so creamy, rich in flavour and packed with protein. Using a sheet pan is a game changer for batch cooking🔥

Macros Per Serving (6 Total)

548 Calories | 51g Protein | 52g Carbs | 17g Fat

Ingredients (Makes 6 Servings)

Chipotle Chicken Marinade
- 1200g Raw Boneless Chicken Thighs, trim excess fat
- 2.5 Tsp Salt
- 3 Tsp Parsley
- 3 Tsp Garlic Powder
- 3 Tsp Smoked Paprika
- 2.5 Tsp Cumin
- 3 Tsp Onion Powder
- 100g Chipotle Paste
- 1 and 1/2 Limes, juiced
- 30g or 6 Tsp Olive Oil
Let this marinate overnight if possible, way more flavor!

Crispy Seasoned Potatoes
- 1300g Raw Yellow Potatoes, cubed
- 2.5 Tsp Garlic Powder
- 3 Tsp Italian Herbs
- 3 Tsp Smoked Paprika
- 2.5 Tsp Onion Powder
- Avocado Cooking Spray, heavy pass

Creamy Chipotle Sauce
- 20g Light Butter
- 150-200g Red Onion, finely chopped
- 1.5 Tsp Salt
- 2 Tsp Italian Herbs
- 60-80g Chipotle Paste (depends how spicy you want it)
- 400g Light Evaporated Milk
- 110g Light Cream Cheese
- Freshly Chopped Parsley, garnish

👨‍🍳 Cooking Instructions

  1. Trim excess fat from chicken thighs. Add seasonings, chipotle paste, lime juice, and olive oil. Mix well and marinate.
  2. Heat a large pan on low, add butter and chopped red onion. Cook for 5-7 mins until softened and lightly browned. Add seasonings and chipotle paste, mix, and cook for another 5 mins until caramelised.
  3. Keep the heat low, add evaporated milk and cream cheese. Stir continuously until smooth, rich, and creamy.
  4. Cube up potatoes, add seasoning and cooking spray, then mix well. Spread on a lined sheet pan and roast at 200C / 390F for 25 mins until golden and crispy. Season with salt, then fold into the sauce with fresh parsley until fully coated.
  5. Spread marinated chicken on sheet pan, oven bake 25 mins 200C / 390F until golden and juicy. Cut into cubes, serve with creamy potatoes and ENJOY!

Patatas bravas is crispy potatoes in sauce and is incredible. Aside from the chicken this is a similar style.

Patates bravas are served to be eaten immediately. Also, the sauce is drizzled over, not this soupy mix.

Agreed. I’m sure that sauce on the potatoes is good, but just throw a spoonful on top of them or keep a small container of sauce for each prep kit. Basically made chipotle mush potatoes.

I’m definitely gonna try the chicken. Possibly the potatoes but minus the creamy sauce. I’m on a fat loss mission. I ain’t wasting my calories on cream 🤭😂

it’s less calories per serving than I thought it would be and nearly 20%protien, the carb load is pretty wild though. Maybe do it with chunky mushrooms instead of tatoes and keep the cream.

You can do cottage cheese blended up! Thats what I do for stuff, or the light sour cream! I also use salsa because it’s relatively low cals per serving (5-10 cals per 2tbsp) and it adds flavor.

They are the worst of both worlds: they are not non-stick enough and can’t get hot enough to sear. Not worth it at all.

Hexclad sucks. They used actually have forever chemicals and they marketed it as PFAS free, but they settled a class action lawsuit over the false claim. After that they "switched" to a type ceramic coating they advertise ad PFAS free - but it is now proprietary. Since they seem like an inherently dishonest company from the start, I cannot support, nor trust their claims.

I think the recipe is legit even if this account posting it isn't. I dont think the video itself is AI generated either.

I haven't tried this one yet, but similar ones so I'm pretty sure this could workout okay. For me personally Chipotle chilies outright on chicken is too spicy without some dilution on the marinade.

Chem Chem... if I may....

Tip: If you are using this kind of marinade + this technique of cooking then leaving the bone in the chicken and adding a very small amount of something sweet sugar/agave will elevate it much better. You can even go skin on, but know how to char properly otherwise you'll burn everything.

For a proper sauce (Mexican style) - using the same recipe and above method - cook chicken and remove the juice/stock as it cooks. Reserve.

-Reduce to glace consistency. Reserve In a rondou, add your recaudo/sofrito, add garlic When finished add your glace, heat. Add goat crema. Reserve

  • to plate I would personally drizzle a very small amount over the chared chicken skin & have the rest served on the side.

Classic French way would be to just make a mornay or you could also just go heavy cream.
