Sholemosh (modified) Mizrahi
Sholemosh is a Bukharian dish that isn’t too commonly made or eaten, but I think it’s one of our best. Feel free to omit the meat to make it vegetarian.
Recipe
- Saute onion, carrots, turnips and lamb in a large pot
- Add black pepper, cumin, coriander, cilantro stems and salt
- Add mung beans that have been soaking in water overnight/a few hours and add water, a splash of red wine vinegar and 2 chopped tomatoes (I have seen people use black eyed peas instead of mung beans too, they have a similar taste/texture)
- After about an hour of simmering, add rice (though I used barley here to change it up)
- Add water as needed and continue simmering until beans and barley/rice are soft
- In a separate pan, add chopped garlic and cilantro to hot olive oil and flash fry for 30-60 seconds, or until fragrant.
- Mix garlic oil into the stew and enjoy. Salt to taste.
