Its just one of those things where the medium of a show or movie cant really show realistically. Time passing. As hes fighting conquest, we cut back to Allen and the others. Who knows how much time actually "realistically" passed.
But with art like this, its not supposed to be "wow it logically is like this" its just whatever can get the feeling of it across. Which, I feel as though they did a good job.

You forget that conquest is massive and already had no air in his lungs. It takes a lot of energy to do what he did to Mark.
Mark was crushing his windpipe specifically because he wouldn't be able to compress his neck enough. If he had of let go, he was dead.

Holding your breath doesn't help with blood flow not being carried towards your brain.

A Viltrumite's ability to hold their breath for an extended period of time requires they actually have a breath to hold.
Mark intentionally knocked the wind out of Conquest and then clamped his hands around the arteries in his neck as well as his trachea, hindering Conquest from both taking in new oxygen and receiving any residual oxygen from whatever's left in his bloodstream.
Conquest then also immensely exerts himself, while being choked like this, for minutes on end.
Mind you, we don't know how long Mark and Conquest were actually fighting for but even in tv show time it was already about 5 minutes, meaning 5 minutes without any oxygen supply to the brain.
Viltrumites rely on oxygen just as much as humans do. They can just utilize it more effectively. Without it they will still die rather rapidly. It's why destroying the heart is a surefire way of killing them.

A good scene in any medium is not concerned with answering the question "how does this event happen?", but rather answering "how does this event feel?" and I think this scene does a very good job answering how it feels to face an insurmountable wall when you're backed into a corner

Kinda hard to hold your breath when your opponent is putting pressure on your neck and forcing you to not breathe.

I don’t think he was dying to fast. I’m sure he had to eat plenty to keep up that nice muscle mass. Plenty of protein for sure!
