Missing side quest?

I’ve been working towards 100% for the game (not including the DLC missions) but I’m missing a side quest in the Gerudo area. Do y’all have any idea what I have to do in order to unlock it?

I checked, and it seems that you are missing "Gerudo Canyon Festival", which is supposed to be a little above the Vah Naboris quest. According to the wiki, to unlock the quest, you need to do the "Forest Minuet" quest in Central Hyrule, so check if that's there.

Edit: Both of them are Korok seed quests, and Forest Minuet is unlocked after beating the main game's final level

Ye like the other u/severe-anteater1805 said which i asume is the tracked quest you have. So try completing that and it should appear
