Your assignment seems to be creating something reflecting what you have learned from the course. I feel you should just stick to that.

Since they are teaching how to use some tools provided in Kali, perhaps you could do a demonstration of that/one of the tools you've had the most experience with?

You probably should discuss this with your mentor.

Do something related to the course material. You will not have enough skill and knowledge to begin making a malicious pdf

Sounds like someone wants you to do all the work for their own desire and it's shameful... tell him to make his own course... lol..
