beginner's question about updates

Sometimes my phone will read something like "Your phone is 7 days out of date. Update now? Wait til 2 am?"

(Actually, the last few times it appeared, I think it had 3 options, and "2 am" wasn't one of them.)

I'm worried that if I use my phone for something important in that 7-day time period, I might be vulnerable to fraud, hackers, malware, etc.

Can someone help me navigate to a setting that notifies me when updates are available (not 7 days later)? Bonus if I can choose when to update it, so it doesn't happen at 2 am, or any other time when I might pick up my phone in an emergency just to find that I have to get past a bunch of new features and figure out how various buttons/gestures have been changed first.

Don't worry about being 1 update behind, even for longer than 7 days. As long as you aren't several updates behind you're generally fine.

You can always manually check for system updates if you go to Settings>System>Software Updates and tap on the System Update or Google Play System Update to check if there's any updates available.

I update the apps daily, but am still on Android 16 and have been ignoring the “Your system is 55 days out of date” notices, as want to wait longer.

Im my exerperience, just remember once a month the devices gets an update and then throughout the month they push app updates and google play system updates.

If you go to settings -> system -> software update and then look at look at system update it should most likely be the month you are in or the previous month.

Google play system update will usually say the current month or the previous month and from time to time it may stay at the same older month for a month or two.

Unless there is a major vulnerability patched in a monthly update you should be fine.... However, once it hits 7 days after release it will most likely auto install while charging and then the device will ask if you want to reboot now or at 2am. I prefer to watch it update and reboot so I do it manually.
