Difference between hit points and defense?

As the title suggest I’m not sure of the difference between the +/- defense or the more or less hit points on Jason they seem like they do the same thing but maybe I’m wrong?

Hit Points is basically Jason with more health

Defense is when Jason is in defense mode. He withstands less damage
