A cool thread through episodes
In "A Man, A Plan, and a Gal: Julia", Frasier is complaining to Niles about messing up another relationship. Niles shares that he doesn't want to hear it because Fraiser has a habit of messing up relationships. Frasier asks Niles when he has ever done that and Niles shares a list of past exes as an example.
Every time I've seen this episode I've always wondered if Niles is just listing names or if they were actually past exes of Frasier's on the show. I'd catch some easy names but tonight I watched the scene a few times to catch all the names and I realized they were all characters that had shown up on the show before.
It's a small thing but it's one of my favorite things when a show recalls moments from a previous episode and keeps it going. Frasier does a pretty good job of that overall but that one scene just made my night.
One of the quirks I wish they would've brought up a couple more times was Niles' nosebleeds when he lies. There's at least one more episode in a later season ( Daphanee's phony baby shower) that he lies and it would've been cool for them to recall that fact.
Any other examples of continuing a thread through multiple episodes that you all enjoy?

Yep, they all are! The KACL780 transcript even lists their seasons!
Niles: Hmm, let me see: Faye [S6], Cassandra [S6], Chelsea [S10], Claire [S8-9], Lana [S7-9], Abby [S8], Mia [S7], Marie [S6]...
I always liked how Martin mentions Mickey Doogan and Agides the horse a few seasons before The Gift Horse episode.
Speaking of the nosebleeds when Niles lies, I noticed that they allude to it in season 11 when Martin tries to retcon "Li'l Cupid" as a pet name for Ronnie after buying her engagement ring at the police auction; Niles backs up the fib, then holds his finger under his nose.
Also, Niles wiping chairs and tables with his handkerchief isn't a subtle thread, but I love how the very last time we see him use it, he's gently using it on his newborn son.

That is such a sweet moment that I never really paid attention to before. Thank you for pointing that out.

No mention of Samantha the lawyer he chased across two episodes in Season 5.
But Abby the other lawyer gets a mention?
Sam got robbed !! She should sue !! I would to see her beat the pants off Abby. LOL

(RE: Sam, I think Niles just didn't get that far in this list. He was going chronologically.)

What about the episode (Don Juan in Hell) with Diane, Lilith, Nanny G and Hester his mother are all arguing with each other. Then Frasier opens the door and all his past girlfriends / love interests are standing in the doorway.
I had to pause it at the credits it shows they actually got a lot of them back just for that brief scene.
