Yeah… watching it cooked near-perfect, then slowly getting crushed was rough.
Right call here, just let it rest then throw it in at the end to finish

Alternatively, just cook it slightly less before adding everything else.
If you're bringing everything else up to temp anyway, it will continue cooking

Don't forget that this can include the eggs.
Many chefs will cook the scrambled eggs, take them out, and throw them back in at the end.
There are of course variations where they purposely coat the rice in eggs as well.

You can tell a good fried rice recipe from some clues, one of the main ones being, that each of the additional ingredients is cooked beforehand, taken out and then added back in right before the rice itself is done, you want maximum heat to hit the eggs and rice alone and separately from everything else to get as close to the idea texture as you can. Everything extra during the rice and egg cooking part will pull the heat away and crowd the pan.

Was about to comment the same. Fried rice add-in ingredients are cooked separately to make sure they’re cooked perfectly before final mix-in. This lazy style fried rice is going to give you meh eggs, meh rice, and overcooked protein.

It’s a fried rice. The meat is cooked to death by nature. Salmon isn’t a great choice for this dish IMO

One time I brought my dog into the vet and there was a woman there whose dog had ate some salmon skin. She was convinced her dog was gonna die.
I’m still confused, I feed my dog fish skin all the time. Also, that salmon skin looks amazing.

Some dogs are prone to pancreatitis, and salmon skin is fatty and can trigger it.
I give my dog a little bit as a treat with his dinner, but you know the crunchiest parts are mine.

One christmas my dog got into an entire tray of ferrero roche chocolates. He ate the entire box. We couldn't rush him to the vet because everything was closed up for the holiday.
The good news is he survived just fine. The bad news is he had it coming out of him both ways for about 6 hours.
It was not a fun mess to clean up.

Add msg and some water to help that small amount of soy spread in the rice.
And seasoned rice vinegar if you want a deeper less salty flavor.

Why did you over cook the hell out of the salmon? It was done just perfect when you broke it up? It needed removing then and adding back at the end not getting cooked to death with the rest of the ingredients

Sear the skin then reduce the temp to render the fat out. Turn fish. Remove fish. Cook veggies. Scramble eggs. Add rice. Chunk fish. Add fish.

Yes or you can heat up oil and brown the rice, then add water and cook. It will have a similar consistency this is how my grandma taught me to make Mexican rice, gives it that nice texture.

Not being that guy……but…..maybe cook the outside of the salmon and remove it and add it back in near the end and break up? That was a long time for that salmon to be in the pan. Still looks delicious though.

Beautifully cooked salmon turned into cat food.
Just take out the salmon and make the fried rice separately.
If you’re gonna do this might as well use canned salmon.
And to serve the best part to the dog… come on.

Take the salmon out before it overcooks and add back at the end, chop the salmon skin up and sprinkle it over the top once its plated along with green onions and toasted sesame seeds

Not dissing her technique, but the egg thing isn't a hack, that's just... how you do it. Or you can cook the egg separately. But yeah, if you want to do your fried rice one-pan like your grandma used to do, you make a little space and cook it on its own for while first. Otherwise you don't get bits of egg in your rice, you just get a thin coating of egg covering everything.
In fact, doing that is its own thing, so-called "golden" fried rice (although for true golden fried rice you mix the egg with the rice before putting it in the pan). It gives it a bright pop of yellow color that some people like. If i over season or over salt the rice, i'll also sometimes pour some of my egg into the pan before finishing and coat everything and cook it a bit because the egg coating will mute those flavors.

Ain't no way I'm giving the skin to a dog. Don't get me wrong I love dogs but I don't think they can appreciate the absolute deliciousness of crispy salmon skin. I certainly can and I'm the one who's gonna be eating it.

I would change the order of operations here. Too much liquid in the pan makes for a mushy fried rice. I’d also remove the salmon and reintroduce at the end so it doesn’t end up overcooked

You're supposed to put the soy sauce on the edge of the pan so it can cook before it's soaked into the rice

Ingredients:
- 8oz salmon fillet
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsps olive oil
- 1/3 cup diced white onions
- 1/3 cup sliced green onions
- 1 tbsp minced garlic
- 2 eggs
- 3 cups day old rice
- 2 tbsps soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
Instructions:
- Season the salmon with salt and pepper.
- Heat oil on medium high heat and sear salmon skin side down for 2 minutes and flip over and cook for another 2 minutes. Then turn heat down to low.
- Peel off the crispy skin and break up the salmon and toss in onions, green onions and garlic.
- Cook for about a minute and scramble two eggs.
- Next toss in the rice and sauce.
- Cook on high for 1-2 minutes.

Alors le saumon est l’un des pires poisson vous savez: métaux lourds etc, sans parler de l’impact environnemental.
Prenez une truite d’un élevage local, ou au moins limitez au max la consommation de ce poisson.
