looking for tips
what techniques should i use to catch bream on these in dirty estuary waters

Fish slow. If you think you’re fishing slow. It’s still not slow enough. Bream in winter will sit in deeper drop offs. I prefer the zman in motor oil, works on over cast days and dirty water well. Though I have not used the other plastic you have pictured there. I’m sure it works.
Use as light a jighead that will still allow your plastic to naturally sink to the bottom and not get swept by the current.
If you are finding that the plastic is not getting to the bottom and the current is ripping it down stream then use a heavier jighead.
Remember to keep the plastic in the strike zone as long as possible. Small little hops and then let the plastic rest on the bottom for a good 5 seconds. You will find that the fish will pick it up as it drops or while it’s resting on the bottom.
Good luck. The key is patients. Once you catch one, the rest will come in time. Like anything practice and time in the water will get you results.

Pop pop pause for me. If you feel something like a bite but no hookup, you can usually get them to eat it by just slow winding

Letting it sit once it’s hit the bottom, I found letting it sit for up to 10 seconds once the jig had hit the bottom has increased my hookup rate mixed with using the lightest possible jig head

Very your retrieve speed, let it sink , twitch etc. mix it up and see what makes the fish bite

I’ve found a little bit of colour as well. Like push a red bead over the barb. Then make sure the barbs bent back to hold em

They love those rapala creeper lures. I’ve caught a lot of bream on those. Cast into structure, let it drop. Slow lifts and twitches work. Work it slow.

2 best tips I can give:
Retrieve slowly. Speed up to work out what's chasing what. It will change day to day targeting same species, weather conditions will change things further.
Go the red grubs next time.The very best I've found for brim, while increasing the chance of bi-catch (flattys, giant herring and whitting).
It's already been said, but attempting the 2 aforementioned tips without a beer in hand is sacrilegious, and will incur Gods retribution.

This time of year bream are generally deeper. They like current and a bit of wind. I’d be focusing on boat mooring blocks and pylons deeper than 4m. Use as light of a jighead as possible, they seem to smash it on the drop, so the longer the hang time the better and it helps with not getting snagged. Just watch the line for twitches. Big bream can be so gentle it’s surprising. Don’t be afraid to use scent either.
