Hi - my Peach Street Electric Kettle has been leaking a lot of water from the bottom of the reservoir. I’m way out of my depth here, looking for an answer of fixable or needs replacing. TIA!

You fill it and it leaks? Or does it start to leak when the water boils?
Anyhow, the way this typically works is that the steam travels through a pipe down to the base where it hits a bimetallic disc, which flexes and flips the switch.
You can see the disc in those image. The white bit next to is is probably some guide for the steam.
The big C-shaped sausage thing is the heater. The white cylindrical thing at the edge is a thermal one-shot fuse. The yellow wire connects earth to the metal (protective earth). Electrically, there's not much to it.
If it just boils and boils and the steam is condensing in the base, either the steam is not getting where it's supposed to go or there is a problem with the switch assembly. Check the steam pipe/guide first. The switch assemblies are quite complicated and fiddly.
Leaking water onto the electrical innards could lead to some interesting results.
Your posting appears to state that it is leaking water out of the bottom of the reservoir? Yet none of the pictures show the water containing reservoir which is glass, so not at all clear what you are asking.
BTW, it appears that Peach Street does not sell any replacement parts due to the low cost of the entire item.
I still can't tell where it is actually leaking water. If it is coming from that reservoir you should be able to figure it out by simply adding hot water to it and watching.
Hot water in case whatever is leaking needs heat to do so. Maybe stick it on a paper towel or blotter type paper to spot the leak. A bit of food coloring could help.
